you should be regularly meeting with a counselor at the xfer center at your CC. Also the UC schools send counselors around to every CC; find out when the next one is visiting your school and make an appt.
What CC do you go to? According to a UC study 19 CC account for 1/2 of all transfer students (http://www.latimes.com/local/education/la-me-uc-transfers-20140515-story.html). If yours is one of those 19 then the xfer center ought to be pretty good. If not, then you should be more carerul in checking the online resources to make sure you are on track (and be sure to meet with the UC rep when they visit).
Also you should look into preference programs. UCSB (of the schools you listed) participates in TAG which offers guaranteed admission. UCLA does not have a guarantee but takes part in TAP which is supposed to offer a preference; see if your school is part of the TAP alliance and if so you should consider joining the program. You can do both TAP and TAG at the same time.
