The Dumfries campus of the U of Glasgow will provide something like a tiny LAC experience and they offer an Environmental Science and Sustainability degree:

It’s suppose to be in a beautiful part of Scotland.

Something similar would be the MacDonald campus of McGill.

Or you could just attend an actual LAC in the US and go on exchange in Europe.

PurpleTitan’s suggestions of McGill’s McDonald’s campus and UGlasgow’s Dumfries are genius! Two highly reputable programs but in a smaller setting.
