Beet greens

<p>1more: are you from the Pittsburgh area? You’re one of the few folks, other than my husband, who’s talked about eating pickled eggs and beets in his/her youth. My husband made the Emeril recipe you posted and really liked it. I thought it was just OK.</p>

<p>Ok, I have never had beet greens but am anxious to try them. Thanks for all of the ideas! I want to find verjus also. </p>

<p>I was born in Chicago though my mother is from the Wilkes Barre area. Maybe I should look for a recipe in Joy of Cooking. I don’t think roasting the beets is the “classic” technique. </p>

<p>My beet greens are washed and ready for tonight. I think I will do the olive oil and garlic method. I like the idea of vinegar at the end. Would balsamic work?</p>

<p>I like something a little lighter but that’s just me. Another possibility (depending on the rest of your menu) is adding some red pepper flakes with the garlic,</p>

<p>They are lovely and quite tender. Like spinach without the acidic bite. I sauté them in a little olive oil, but I don’ like adding garlic as I find it overpowers them. I prefer just a little salt. </p>

<p>Reporting back- I sautéed in a small amount of olive oil with shallots and garlic. Added red pepper flakes and a splash of red wine vinegar at the end. Served it over quinoa. H liked it but thought that it was a bit on the bitter side. I liked it. I can’t decide if next time I would add more vinegar or leave it off all together. I would have used lemon but didn’t have any in the house. We both would have it again. I like that you use the entire beet without any waste. </p>

<p>Loved beet greens as a child. My mother just cooked them without anything fancy (she was not much of a cook). Never planted beets as an adult as it seemed a waste since I can live without that root. </p>

<p>I’m not crazy about beets, so it doesn’t seem worth the red stains to cook them. But the beet greens sound wonderful. I like most leafy greens. Have not yet tried dandelion greens or collard greens. I wonder whether beet greens are sold without the beets?</p>
