At some point, you are going to have to pick something. Getting a whole bunch of different degrees won’t actually help you hedge your bets; it may just make you look scattered and unfocused. This is especially true in two highly-structured, pre-professional majors like engineering and accounting. Theoretically you can do this; in practice it would probably take you 5-6 years just to do the two degrees. And minors like languages and music are also pretty time-consuming: language requires lots of speaking practice and music often requires lots of lessons and/or recitals/rehearsals.
You can always just take classes in your interest areas without formally minoring or majoring.
