Easter Dessert - got coconut cream pie? carrot cake?

Well, guess I’ll have to get my coconut creme pie fix somewhere else - “we’ve” decided on the strawberry pretzel dessert, a great from scratch brownie recipe with my niece’s homespun ice cream and another niece’s fancy cupcakes. Yeah, 3 desserts. We don’t mess around on the holidays. :)

I expect to see all of you in the diet, health, exercise, etc., thread next week! :)

abasket–you can whip up an easy vanilla pudding and throw in some coconut if you are craving it. I just mix about 3 cups of milk with 4 eggs, 1/2 cup of sugar, 2 tablespoons of flour, beat it up and microwave it for 3 minutes and stir, 3 minutes and stir until it thickens. Then stir in a dab of butter and a teaspoon of vanilla, add your coconut–and you have your fix. No crust, just pudding. Mmmmmm. I think I’ll go make some now…

abasket, There’s no jello at all in your recipe? I googled and all the pictures I saw had gelatin/jello around the strawberries. I am intrigued by your recipe, but still not sure pretzels & strawberries “together” can be a good idea :-).

Allthis, I haven’t made it before and since I only ate it once I can’t remember if there was a jello component! But I’m glad you brought that up - I’m seeing the friend who had it at her son’s grad party later today so I will ask!

I have had the layered strawberry pretzel dessert that DOES call for jello around the strawberries - but this was different - it was served mixed in a bowl, not in a pan to cut pieces.
