Easter Holiday - Traditions or New Recipes?

I am hosting:

Maple glazed spiced fresh ham - prepped and ready for early morning oven
Mashed potatoes - plain, or may add garlic and/or parmesan
Roasted asparagus with sauteed peppers and onions
Mint buttered carrot chips
Arugala salad

DD is bringing green beans
DS is bringing dessert

Like most any holiday, the side dishes are the stars for me! We did our Easter today. I did 2 spatchcock chickens - one seasoned with zatar and one citrus. But the lemony brussel sprouts, kale salad with a delicious green dressing and a egg plant parm were the stars!

Last night, enjoyed ham, asparagus, mac&cheese, caesar salad.
Having casserole of ham&cheese today.

Tradition rules here too with

Charcuterie, deviled eggs, and Brie for appetizers
Honey baked ham
Leg of lamb
Potato salad
Greek salad
Hawaiian rolls
Carrot cake
Costco’s lemon meringue cheesecake

I also picked up a limoncello cake at Costco for $5.97 and can’t wait to try it.

lol we finished up our Christmas ham last week, made some split pea soup with the bone.

We aren’t really doing Easter, the two away at college went overseas for spring break so I told them they should just stay put (they’re guests at other brunches). Went out to see MIL in assisted living yesterday, the three local kids came. Dd14 had gigs Friday and Saturday night, she’s a CPA so working today. Ds16 stayed over and had breakfast with us, I encouraged him to go to his girlfriend’s parents.

Every year the girls dye eggs and I hide them (very well) in our yard for the hunt. This year I just boiled eggs and made deviled eggs. Dinner will be a pizzagaina from a local deli for the 3 of us. And jelly beans.

I have never frozen ham. Is it the same texture etc. upon defrosting?

I think it is! We had a spiral ham and froze it in packs for two servings. It was fine.

I’ve frozen spiral baked ham many times. This time there was a big chunk, and after defrosting in fridge I sliced it and microwaved. If you are concerned about doing so, try it the first time diced to be throw into eggs, mac/cheese, etc.

Freeze ham ALL the time. I put in ziploc bags portioned out for certain things - smaller pieces to put in an omelet or quiche, bigger pieces for ham and augratin potato casserole. Never a problem.
