Does he grill at all? Can he grill meat a few times a week while you make the “sides” (which become your meal)?
If outside grilling isn’t an option, I love my Ninja grill/airfyer. I can throw meat on there while I make my plant based stuff for myself. I basically serve the meat and let anyone that wants eat my plant based stuff. Sometimes I’ll also throw potatoes in the microwave or make a pot of rice.
We don’t mind leftovers and I’ve gotten really good at repurposing the meat (for him) and rice/potatoes for multiple meals. Now that he is retired and I am off for the summer, we’ve been really good at limiting our food waste.

We’ve been making some adjustments too, as I’ve been trying to reduce the amount of starch I eat. H will eat some vegetables, but he’s definitely a meat-and-potatoes kind of person. There must be protein in every meal. I’m a starch and dairy person. I don’t like veggies either, but I’m trying. (Salads are ok though!)
I got spoiled when he was working two to three nights a week. He would take care of his own food on those nights, and I could blissfully eat whatever I wanted. But that ended a few months ago, since he now works 6 a.m. to 2 p.m.
So, I told him that two nights a week, I’m going to eat what I want, and he can take care of himself. I’m usually nice about it - I’ll make something earlier in the week that leaves leftovers, and he’ll eat that on one of the nights. I should add that he’s great about eating leftovers, whereas I can’t stand them most of the time.
So now, two nights a week, we do our own thing. Saturdays, we eat out—that’s always been my splurge, though places like Applebee’s are about as fancy as we get. Thursdays, we get healthier fast food like subs (no sides for me, and I bring my own drink) or a grilled chicken salad from Zaxby’s.
That leaves three nights a week when I cook something “good” for him. I’ve cut back on the potatoes and rice I serve—or I’ll make them just for him and have a side salad myself. He’ll eat the salad too, so it works.
Long story short: it doesn’t have to be all his food or all mine. At least, that’s what I’m trying!
