A third option, if you are doing this primarily for yourself and don’t plan on a highly theoretical job for someone else, is to get a non-ABET accredited engineering degree. They still result in a useful technical background, albeit not as strong as a fully ABET accredited degree, but have far more flexibility to study other things.
