I like unsweetened seltzers, any brand. My favorite drink is lime seltzer with a spritz of ginger shot and squeezed lime over ice garnished with a sprig of mint. This is my mocktail of choice.
Ginger Shot (makes two cups):
1 pound unpeeled ginger root, washed, dried, and cut into chunks
2/3 cup lemon juice
1/4 cup water
1/4 cup honey (optional)
Place all ingredients into food processor and blend on high until smooth, scraping sides as necessary. Transfer mash* to a strainer placed over a bowl and use a spatula to press out all the juice. Store juice in an airtight container and refrigerate.
*Divide mash into ice cube tray compartments and freeze. Use in any recipe calling for grated ginger.
DH uses the mash cubes in marinades.
