19: JustaMom: Experiment with different spices to add in. Maybe it's just lacking flavor that spices can add to it. Dried Basil? Oregano? Italian seasoning? salt & pepper? Parsley? I have a dried spice that combines Italian seasoning with a Parmesan cheese.....I seem to add it to everything! If the soup has too much salt, I'd add a pinch of sweet & low to counter-balance the saltiness.
Thanks ChocChip. I’ll mess around before I get it stored. Parm seemed to help, as did some salt.

Put some EVOO in pot. Chop up onion and garlic and add some red pepper flakes. Sauté for a few minutes. Cut up tomatoes in tiny chunks. I leave the skin on. I prefer plums for sauce but have used regular tomatoes, too. Dump tomatoes in pot along with chopped up fresh basil. Pour in some red wine and bring to boil, then simmer for a few hours on low heat. Sometimes I add chopped carrots to my sauce or oregano instead of basil. I also sometime add anchovies or capers in with the onion and garlic.
This tomato sauce recipe from Marcella Hazan’s “The Classic Italian Cookbook” is really yummy. It really captures the fresh taste of ripe summer tomatoes.
