I had sugar snap peas from Trader Joe’s tonight. We usually eat them raw as an appetizer or snack but tonight I read the microwave instructions on the bag. Microwaved in the bag for 3 minutes. Ate them with just a squeeze of lime.

Make the meat sauce with ground meat and jarred pasta sauce and serve over toasted cauliflower. I also roast cauliflower and shallots and use it as filling for tacos or quesadillas.

I like to think that DH and I live mostly on vegetables, yet I won’t eat many of the most popular: beets, brussel sprouts, sweet potatoes, any type of squash/zucchini, cooked cabbage, and I’m very particular about how I’ll eat peas and cauliflower. Put any form of sweet/sugar on or near a vegetable or in a dressing, and I won’t eat it, including adding berries to a salad, I’ll just pick them out.

Maybe I’m more like the OP’s DH…

Asparagus is a weird one for him to like since it has such a strong flavor (and makes your pee smell weird). What is the common factor for the veggies he likes? Does he like them to be crisp and not mushy? Does he like spinach raw or cooked?

Carrots, sweet red bell peppers, sugar snap peas are all crisp and sweet and can be eaten raw or cooked.

What kinds of cuisines does he like if you go out to eat? Is he just a burger guy? Or does he venture out to Chinese or Mexican? Maybe you can incorporate some veggies that are common in those cuisines.

There are very few vegetables H & I don’t like. I’m trying to think of one and coming up blank. I like everything mentioned on this thread. We subscribed to a CSA (Community Supported Agriculture) when our kids were little and got all kinds of interesting veggies. DH loves to go to the farmer’s market now and buys all sorts of things. There are some Asian farms in our area growing veggies that are unfamiliar to us but I will always give then a try.

He hates bell peppers. He hates his veggies too crisp, prefers them soft. He likes Mexican and Chinese, but only certain dishes which he orders over and over. (Well, me too.) He does like cooked carrots, and someone upstream reminded me that roasting carrots is great. I occasionally roast root veggies – onions, carrots, parsnips and potatoes. That he eats – except for the parsnips. :roll_eyes:

Try roasting carrots with apples and purple onions! Yum. Apples provide just enough sweetness so no sweeteners are needed. Drizzle with olive oil, sprinkle some herbs if you like, and roast.
