To be blunt- your math SAT is a problem at the reachy schools on your list. Fantastic EC’s will not compensate for a math score which suggests you might struggle as the ME math gets harder and harder and harder (really quickly).

I know that my SAT is the weakest part of my application, besides yk the obvious of being an international student that needs a significant amount of aid

I do have an ACT test next month, & I’m hoping for a better score (although I’m being realistic with the fact that it won’t be that drastic 29-31ish prediction) but ill try my best!
