Help with Hard Boiled eggs.

Try using a spoon to peel the egg. I find that this technique works well.

I eat two eggs for breakfast most days. Here is what works:

  1. steam, do not boil (I saw this on a science-based cooking video which I can’t find now.) just put a small amount of water in a pot with the eggs, do not cover with water. No fancy equipment needed.
  2. place in cold water after
  3. choose white eggs over brown if available. I am absolutely convinced they peel easier

SALT THE WATER

I’m very surprised that no one has yet brought this up. Place the eggs in the pot, cover with cold water, then add several tablespoons of salt, depending on the size of the pot. I usually add about four heaping tablespoons of salt to a small pot with six eggs tightly nestled. Bring to a boil. Remove from heat and cover the pot and let sit for 14 minutes. Drain and fill the pot with cold water - let sit for several minutes. You can peel the eggs right away, or store them in the refrigerator and peel when eating them. The salt helps the membrane pull away from the egg white, making it much easier to peel (and it doesn’t make the egg salty).

I started to experiment with all your ideas today. Will probably take a little while, but I’ll get back with my results. So, today I di the following. I will let you know how they peel tomorrow morning.

  1. Set out my 5 day old refrigerated eggs for 2 hours.
  2. Brought the water to a boil with 5 tablespoons of salt.
  3. Put in 6 eggs.
  4. Brought back to boil, then turned off for 15 minutes.
  5. Drained and put cold water in pot with a bunch of ice cubes for 5 minutes.
  6. Refrigerated.

Ok, I peeled an egg this morning from the experiment yesterday written above. The shell practically slid right off in one piece!! Thank you all. It was a combination of several posts. I did put a lot of salt in, too. Hallelujah.
