ED and EA are two different things.
ED means that you have committed to attend if the financial aid offer (which should be given at the time) is sufficient.
EA means that you are not committed, so you can wait until the usual matriculation date and compare offers with those from other schools. The restrictive aspect of Stanford EA is just your agreement not to apply EA to other private schools (with some exceptions as listed on Stanford’s web site).
