Not taking the Honors version of a particular class is not the end-all be-all when it comes to admissions. Taking the non-Honors version of a class does not mean you are no longer considered worthy.
For example, I have known students who took a non-Honors class due to schedule conflicts. It sucks when it happens, but it is out of the students’ control.
Just do as well as you can with the classes that you do take.
