So how do you guys cook your steel cut oats? I bought some, probably a year ago, and ate them for a couple of days, and then stopped. But I know they would be better than my Kind bar once I get to work, and I’m going to try and improve some of my habits once my kids head back to college this year.
Fallgirl, this muffin recipe actually called for oatmeal flour but I think you could substitute the oatmeal flour in lots of recipes. Very easy to make in food processor.

Both exercise and nutrition matter!!
While I like my steel cut oats sometimes, I find I like a protein rich breakfast - and it sticks with me. A typical breakfast I bring to work with me - I eat this at least 3 days a week:
Stonyfield whole milk yogurt w/fresh fruit and homemade granola
Soft boiled egg
Water and one cup of coffee with sweetner and half and half - no one mess with my half and half!!!
I feel like I’m eating real, satisfying food with this. Sometimes I made a one egg omelet with some diced veggies, a protein like ham or a little sausage if I have it handy and some queso fresco.
I leave to visit family in the midwest tomorrow. The bad news is that I tend to gain a few pounds every time I go. My folks cook very little and dine out a lot. There is food, food, and more food at my MIL’s house. There are a few delicious (high calorie/unhealthy) local specialties there.
My plan: walking every AM. Taking my yoga mat (have already checked out a studio). Small portions on the treats. Limiting the wine (5 o’clock is early there). Pick up a few healthy snacks.

Don’t let those family members be pushy about what you choose to eat or not. Enjoy and put that exercise plan in place - sounds like a fun get away!
Has anyone used coconut flour in recipes as a substitute for regular flour?
For those of you who cook with coconut flour and almond milk, please be sure to bring up the ingredients when the food might be consumed by someone out of the immediate family. Lots of people are allergic to nuts. This was a public service announcement.

Well, here is the PROBLEM!!! Who the heck eats breakfast at 8:30? This is almost lunch time for me!!! Then, what they ate… frosted corn flakes!!! No wonder, if you skip eating this crap, you will be better off!
How about a study of middle aged women who eat eggs and yogurt at 6:30 am?
No way, I definitely eat more throughout the day when I don’t eat breakfast!
Also, they didn’t mention what kind of oatmeal. Was the instant, pre-sweetened kind? that could have almost as much sugar as the frosted corn flakes.
Gertrude, I bet it was the awful instant stuff. Because breakfast is supposed to be… instant. Like pouring a bowl of corn flakes.
I think the answer is “It depends.” Some people need a substantial breakfast and some people don’t.

Yup. I started eating bfast long ago bc I always ate a huge lunch. Well, when I ate bfast— I ate a huge lunch. So I skip it, have coffee, end up doing the 16:8 intermittent fasting and it works great for me. I think it all depends on the person, along with lots of things that have to do with health and fitness.
I agree with you, oldmom. If one eats a really big dinner, then skipping breakfast is not an issue (and one might eat a big dinner because she does not eat breakfast). We all have our own biological clocks, and whatever works for one body does not work for another body. As long as we don’t eat crap like frosted corn flakes… we are good.
I actually never remember to eat breakfast as I am a slow to awake person and love my 2 cups of coffee. I can leave the house and remember hours later that I meant to eat something or at least bring it with me. I need something by 1-2 pm or I get a headache. I have been eating a little when I exercise such as a yogurt and typically eat around 11 am if I am around food.
I am so happy to have this information out as I have been criticized for years that I do not eat or like breakfast.
I am truly hungry at 3:30 daily so save food for then.

My D is home for 3 weeks and she loves my cooking and has requested many dishes. The food is not unhealthy but I tend to eat more when I enjoy the company.
I feel bloated and weighed down when I eat a substantial breakfast. I do eat a little something (banana with peanut butter) and that’s plenty to start my day. Sometimes I meet a friend before noon for a late breakfast (egg, potatoes, bacon, toast, very yummy!) at a restaurant and I don’t recover my energy afterward for hours. Yesterday I walked home (couple of miles) and that helped!
IMO, the habit of eating breakfast is important for folks who start their days early and have a rigid schedule that does not allow them to nibble or take coffee breaks… think HS kids who are not allowed to have food in the classrooms. By the time their lunch time arrives, they will have spent 6-7 active hours without food!
