Most interesting to me was that 31% of all medical school students come from “Most Selective Private Institutions” (which makes sense as these students test well and earn high grades and tend to be highly motivated).

I believe that the College Transitions site you linked to uses the same base source as was discussed in this thread: Colleges with Acceptance Rates Above 20% & Strong Pre-Med Programs. There are a number of schools with more approachable acceptance rates that are listed in the first post and in a few subsequent ones by @NiceUnparticularMan and @fiftyfifty1.
