Quinoa

Use less water and it cooks up like couscous. We prefer it to other grains. Buy it in more bulk at Costco. If it’s watery or dense then you’ve made it wrong.

You can cook it with anything, from veggies to whatever you want. Even just some lemon is good.

Try toasting it in the pan first. Brings out the nutty flavor.

The curried quinoa was delicious. D said she was not willing to even taste it. Not sure about H. I had a meeting tonight so they ate without me. They are out practicing driving so have not yet hear H’s take on the quinoa. The recipe I used was the Curried Couscous recipe from the first Barefoot Contessa cookbook. I would make it again.

One Pot Quina with Kale and Goat cheese was excellent. We tried the recipe last night. Everyone was won over it. Stauday special for us. Saturday is a vegetarian meal day at our house. zipyour lips thank you for the link.

I love quinoa. I agree with toasting it, makes a big difference.
I like it with a little butter & hosin sauce ( this was in the days when I could eat sodium)

I always cook it in chicken broth, then add finely chopped vegetables.

Best Quinoa recipe that I have found comes from the DASH diet (for lowering blood pressure):
