Maple flavoring is “temporarily unavailable” at Krogers?? Please don’t let this be the item I have to go on a mad hunt for the next 5 days. There is one other grocery (Walmart) in the nearest town and I need this for my annual Christmas breakfast rolls.

Thanks to all you memory joggers, I am now off to the kitchen to make the “forgotten cookies”/overnight cookies with meringue. Good memories–my grandma used to make them. She wasn’t a good cook either, so hopefully I can do these!

DD was recently diagnosed with IBS and is on a gluten free (among other restrictions) diet. Not trying to just sub GF flour in our traditional recipes but have found good GF options on King Arthur flour’s website. Any other GF bakers have suggestions?

And “people puppy chow”, fudge, and leche quemada are GF!

@lookingforward Thank you for posting the link! We have a bakery that makes these but they are so expensive…and get eaten way too quickly. Your friends/family are so lucky!

@yauponredux, meringues as mentioned upthread are gluten free. You could make a crustless cheesecake, flan, creme brûlée, an ice cream cake, mousses, puddings, marshmallows, toffee as mentioned previously.

@lookingforward, thank you! D loves anything pumpkin or chocolate, so the combination looks perfect! It’s a weird set of restrictions that includes typical dessert ingredients like honey & apples. Some folks with IBS have to go dairy free as well, but she seems to be able to tolerate small amounts. This is what I get for scoffing at people who claimed to be allergic to a different item each time a news article was published.

I think oatmeal is gluten free-you could probably adjust the cranberrry/white chocolate/oatmeal cookie recipe to use oatmeal and coconut flour instead of wheat flour.

I haven’t tried it, but since Cheerios are gluten free, I read that you could substitute them for graham cracker crumbs in recipes that call for those. (Pulse them in a food processor, or put in a bag and crush with a rolling pin, etc.)

I just transitted through Heathrow and bought a half dozen boxes of Walkers all-butter shortbread cookies.

I attempt to limit gluten. My three cookies are buckeyes made with almond butter (for me as well as peanut allergic daughter) coconut macroons-some recipes are gluten free, and meringues sprinkled with a bit of colored sugar. There are many meringue based Christmas cookies.

Much oatmeal is cross contaminated with wheat, but some is certified gluten free. Cheerios are a great idea, as is puppy chow with rice chex.

Puppy chow? As in dog food? Or am I missing something, lol?

Puppy chow, as in chex mix cereal coated with yummy stuff. Sort of a snack, as if I could afford to snack on such an indulgence. But it is addicting! I have never made it, but a friend gifts it on occasion.

Best Puppy Chow Recipe

Ingredients

1 (12.8 oz) box rice chex
1 (12 oz) bag semi sweet chocolate chip
3/4 cup peanut butter
1 stick (1/2 cup) unsalted butter
1 teaspoon vanilla extract
5 cups powdered sugar plus more, if necessary 

Instructions

Start by taking the whole box of chex cereal and place it into a very large bowl. If you don't have a big enough bowl, we always used a garbage bag growing up to mix the puppy chow together! Yes. It was a new one. ;) Set this aside.
Place chocolate chips, peanut butter and butter in a large microwave safe bowl. Microwave for 60 seconds and then stir until smooth. If the chocolate chips haven't melted enough, microwave at 30 second intervals, stirring in between, until the mixture is completely melted. Then stir in vanilla extract.
Pour the chocolate mixture over the chex cereal and stir together gently with a spatula. If using a garbage bag, shake gently, until all the chex pieces are completely covered in chocolate.
DO NOT OVER MIX. The chunks are the best part! The cereal pieces should be completely coated in chocolate, but it's ok for a few to clump together ;)
Next, you're going to pour in the powdered sugar. Usually, I don't measure, but just keep pouring, mixing, and pouring more in again, until the chex is completely white! You'll definitely have extra powdered sugar at the bottom of your bowl, but that's nothing to complain about! 

Allow to dry, store in airtight container.

Puppy Chow tip. I put the dry ingredients in a bowl, mix/melt/pour the other ingredients over the dry and mix gently - then place that all in a large paper grocery bag, add some powdered sugar, then roll the top of the bag down and shake and toss well for a minute or two - easy way to coat with the powdered sugar. Then just toss the bag!

My grandmother always made one kind of cookie I’ve never seen anywhere else. She called them Filberts, and they are just hazelnuts, powdered sugar, and egg whites. Maybe a little flour if the dough is too sticky. You mix part of the sugar and egg whites with the ground up nuts (she used to have me on a hand grinder!) for the cookie and save the rest for the icing. They are a bit of a pain to make but I am the only one who will attempt it anymore. Thinking about making some tomorrow to bring to my parents.
