Sophomore transfer and then transfer again?

Unlike high school, your status as a freshman/sophomore, etc is triggered by the # of units you have. Other than a few real outliers, UCs will only look at an application to transfer from someone on a path to Jr status (60 semester units/90 quarter units) by the end the semester after they apply. You can use AP credits to meet the unit threshold but, you are still considered a Jr transfer.

After arriving at your transfer destination, you can transfer elsewhere if you like but, your transferable units will be capped. some UCs accept high unit transfers, others don’t

I think all campuses (like UCD) also require that a minimum number of units be taken at their campus

So, to answer your question, kinda but not really.
