"South Beach Diet" cookbook recipe favorites?

<p>Here’s the link to the recipe, but I have to warn you – I made these and they were horrible. I thought maybe the first time I made them I did something wrong. So I tried again a few months later using silicone muffin tins and they were still awful. I followed the recipe to the letter so I don’t know what I messed up. Maybe my oven bakes hotter than normal and they were overcooked. The recipe gets rave reviews so it must just be me. :(</p>

<p>I used to make these from the SB cookbook, ,but I had to fold in add extra whipped egg whites to avoid them being too flat. This year DH and prefer to just microwave a plain egg (30 seconds in a custard dish or Corelle mug)</p>

<p>I have never gotten the egg muffins to come out tasting good. I gave up and just make them daily.</p>

<p>I still make those but I make them as a giant casserole. Quart of eggbeater (southwest or I season them myself), a package of shredded 2% cheddar, a bag of frozen spinach. Combine in a baking dish, cook for about 35 at 350 and cut up. Voila, breakfast for the week.</p>
