ETA I found it on-line. It sounds really good. I’m going to try it instead of key lime next time I need a simple dessert.
^^Very easy, very good. Recommend using both fresh lemon AND lime juice.
How did you make cheese enchiladas?
Yes I did! They disappeared! Just corn tortillas, a cheese blend of crumbled queso fresco, cheddar and a shredded queso cheese, and enchilada sauce. Cover the bottom of the pan with sauce, put together the tortillas with cheese and a spoon of sauce, roll up and line the pan. Cover with more cheese and rest of can of sauce. Top with garnish of your choice - cilantro or chopped green onion or fresh jalapeno slices - or all!
Man, I want that.
