Imake baked beans similar to the Pioneer Woman but leave out the green peppers. IMO, if you cook it long enough, no need to precook either the bacon or onions/peppers. Save yourselves some steps and dirty dishes.
Sorry to be late with this recipe, but I have not been back on CC since last week. I do not have my recipe with me, but this one is very similar if not the same. I use white vinegar and dice the onions. It’s very pretty to use red onions but tastes the same with any color of onion. I use 2 lbs of carrots and have also used canned carrots before.

^^Thanks, musicmom: I will definitely try this recipe. Sounds yummy. I would have hoped the OP would have come back to let us know what she made and how the older crowd enjoyed it.
Cucumber salad. Peel & slice cucumbers into 1/4-in. discs, then quarter the disks (cut away the seeds if you like, but this is optional). Sprinkle with a little salt, white sugar, and chopped fresh dill, drizzle with white vinegar, shake to blend flavors and release natural juices in cucumbers, and chill for at least an hour. It’s cool and refreshing but with a nice overlay of sweet, sour, salt, and the tang of fresh dill.
