Thanks, Sabaray, for the cooking directions. A definite plan for my menu this week!

I had these ginger beets tonight. They were amazing.
I substituted golden beets & white balsamic vinegar.

EPTR, I forgot to mention, make sure to put the foil packet on a baking sheet in case there’s any leakage from the packet.

EK, those sound delicious - I will be adding those to my list of recipes to try.

I’m growing some beets in my garden this year! Love beets especially in salads. An inexpensive easy option is the jar of pickled beets that Costco carries - only about $5 for a big jar - an easy side vegetable all year around. Just spoon some out and done!

Update: we went out as planned, I did not touch dessert, and Mr decided that having an appetizer was too much.
Yay to us.

BB … 10 points for you and H. That feels even better on the drive home … No guilt.

Congrats. I am glad some are doing so well. Wish I could say the same :(

Jym, what do you think is your biggest motivator? And what is not? We need to figure out how to get you on the horse long enough to make you feel good!

The upcoming engagement party is the motivator. The mtiple lunches/dinners and weekends at friends places, and more upcoming travel, for birthday and anniversary were the challenges.

I have had the same challenges. DS got married last weekend. With vacation, future DIL’s BD and rehearsal dinner my MOG dress fit like a rather snug glove. Then the wedding, followed by catering leftovers the next day. (Wedding cake for breakfast anyone?)

Now we are spending a few days in Maine and yes, I would like drawn butter with my lobster. Heading to a second wedding this coming weekend and I am happy to have packed a more forgiving dress for that one. ;)

congrats, 1moremom!

Thank you. :)

Congrats, 1moremom! Sometimes you just have to relax and celebrate.

My beet salad was delicious! Thank you everyone for the directions. Wish someone warned me about the red urine though!!! @-)

EPTR, think of that beet color as antioxidants that are cleansing your kidneys! ;)

I also roast beets in foil but I like to do a big batch and wrap them individually. The extras go on the fridge where the keep for about a week. One of my favorite uses is to make a beet sandwich on good grainy bread with goat cheese, arugula and a drizzle of good balsamic.

A local restaurant serves what they call beet carpaccio. Sliced very thin, drizzled with olive oil and balsamic, salt and pepper, and a small chunk of goat cheese. DH likes it. I’m not a beet fan, although I do like the greens when they’re very small. (I grow beets so I can thin the patch when the beets are about 1/4" in diameter… beet sprouts are great in salads.)

I didn’t think I liked beets until a few years ago when I finally tasted a chilled goat cheese salad, and now I think they’re great. Especially other than regular red beets; I’ve had salads with gold, white, candy cane, et al.

I eats beets all the time, it’s very easy to grow in my garden. I remember one time we fed one of D1’s friend beets and she was also told us she didn’t like to have red urine. But I’m a bit more careful NOT to eat too much nowadays, something about oxalic acid leaks calcium I as I read from many sources.

Bump from page 9 - how’s the summer going for everyone? I’m still struggling to gain back self control and keep the weight from creeping up. On a positive note, I got back on my bike for the first time since breaking the ankle a year ago. No problems with the ankle, but thigh muscles and stamina will need some attention. It felt good to be back on, even for only about 15 minutes.
