What are you preparing to eat for the 4th

Two standard summer recipes at our house - fruit salsa and this delicious corn/black bean salad:

<a href=“Corn and Black Bean Salad Recipe”>http://allrecipes.com/recipe/corn-and-black-bean-salad/detail.aspx

Use whatever fruit you have for the fruit salsa - my standards are peaches, black cherries, berries. You can buy the Stacey’s cinnamon sugar pita chips at the store to make things easier.

On the corn/black bean salad, I also add other stuff like chopped banana peppers, avocado, etc. To make it more hearty, add feta crumbles and/or chopped chicken.

I plan on having a lobster roll in NYC after seeing the costume exhibit at the Met. I’m going to try and pretend I’m on the Cape or something.

Brownies are in the oven.
I think I have settled on an Israeli style cucumber salad and a mango salsa quinoa salad that May or may not contain black beans.

You guys are making me hungry - and a little homesick for the good ol’ USA. We live in London, so 4th of july is a work day. :frowning: But I’m making hamburgers, a marinated vegetable salad, deviled eggs and homemade salsa and chips. I’m thinking of doing a peach cobbler for dessert, if I can find decent peaches. H says he’s picking up some Sam Adams. Happy 4th, y’all!

I’m making a Grilled Asparagus Salad to take to the neighbor’s cook-out. Put a drizzle of olive oil and sprinkle of kosher salt on asparagus and grill until tender crisp. Top with small cubes of fresh mozzarella and drizzle with vinaigrette made of equal parts lemon juice and olive oil (say 3 T each). Top with toasted pine nuts, if desired.

Also taking cubed up watermelon because, for me, it’s not July 4th if I don’t eat watermelon!

Those fruit salsas sound wonderful.

Aaack! Watermelon! How could I forget to buy a watermelon?! It is not 4th of July without my favorite birthday food.

Nooooooooo! The watermelon MUST be served on the rind so that the juice dribbles down the chin when eating!!! Then it’s really 4th of July!!

You all are too fancy for me - our 4th of July is the traditional hamburgers and watermelon picnic in the back yard.

But I’m noting these other recipes for other days!

Good point glopop, the rind is important IS important!

It’s not the Fourth without a 3- or 4-bean salad. IMO. :)

We’ll be grilling Hebrew National dogs. We tried those on Memorial Day and will never grill anything else.

It’s not 4th of July if I don’t have my family with me…that and jerk sauce. ;)

Florida is being Florida. A quick bout of rain to add a natural flavor to the grill!
