I’m not a big believer in choosing courses based on what colleges (beyond the minimum they list and anyone would take anyway). Which courses to do you think will serve you well in the long term. What do you think you will pursue in college. If it is any STEM (including econ here) related area, then you should definitely favor STEM over humanities courses now. In that case, I’d go for AP Research and make sure to add math. That’s not because schools like to see that but because you will need that if you continue in any STEM related field. As you probably know, anatomy is a big memorization task which takes a lot of time for some and is really easy for others. Which is true for you? Adjust accordingly.
