@toledo, I never knew anyone else who ate lefse at Christmas! My grandmother was Norwegian and we’d have it every Christmas eve. We’d wrap the lefse around heavy, over-cooked sausage. I never knew you would eat it with butter and sugar until we went to the Norway exhibit at Epcot. My kids prefer it that way. I order my lefse online and my annual supply arrived today. I’ve never heard of serving it the way you do. I think I might have to try it.
Christmas Eve is Mexican, in memory of my childhood spent in a border town. I make tamales, enchiladas, beans and rice, usually with flan for dessert. Christmas Day is spent with our Indian DIL’s family and the main course is biryani. I’ve been asked to bring two vegetables and dessert…I’m still working on ideas.
Corned beef and cabbage. Honestly, it’s a family tradition. Just like it was St. Patrick’s day.
Tamales for Christmas Eve. It was carry-out pizza when the kids were little because most of m day was prep for Christmas brunch and dinner.
I buy Lefse at our local market–we wrapped a good cheese in it and some mustard and micro for a few seconds–so yummy!
Also, if packaged has a really long shelf life.
I do not know why but I discovered it about 20 years ago.

@Bromfield2 That risotto sounds great. Does it actually look like the photo in your link? It calls for a can of tomatoes and I don’t see anything tomatoey in that photo.
H often makes lefse over the break. We even have a lefse griddle. Since his side is Norwegian, he does the lefse, krumkake, And sandbakkels.
Christmas is at my house this year. Sisters, husbands, BF, kids, hangers-on.
We typically have cheese, olives, crackers and wine before dinner
Dinner -
Prime rib, mashed potatoes, 1 or 2 veg of some kind - it varies according to what we find tasty any given year, rolls, maybe a salad, plenty of wine.
H is getting a sous vide setup for Christmas, but I’m hopeful he leaves using it til New Years.
Dessert something homemade and elaborate.
We switched to prime rib a few years back. Home made horseradish sauce, mashed potatoes and possibly also roast potatoes (I love roast potatoes but my daughter always wants mashed), Yorkshire pudding. Probably daughter and SIL will do a veggie. This will probably be the week after Christmas. H & I are off to Vegas for the Christmas weekend where we will drink bottomless mimosas at the Christmas brunch buffet. And eat some food probably.
So I looked up Yorkshire pudding, and it’s not a pudding at all! I never knew that.
Roast beef and Yorkshire pudding is my favorite meal. But hard to do for 35 people. So save it for special family dinners.
@doschicos You’re right–that photo doesn’t have tomatoes. I use canned tomatoes (diced) and you can see the pieces of tomato.
We are going to have a traditional meal of Roast Beast. Just like in the Dr. Seuss.
Hot Crab Dip
Mix together (like tuna salad):
2 cans crab meat
1 bunch green onions, chopped
10 oz grated swiss cheese (or any cheese you like)
1 tbls lemon juice
½ cup Miracle Whip (I hate mayonnaise, but you can use it) or more if you like
Transfer mixture to a small casserole or oven-proof bowl. Smooth down with back of spoon. Sprinkle grated cheddar on top. Bake at 350 for 20-30 minutes, until hot and melted. Or, just heat up/keep warm in a very small crockpot. Serve with crackers/chips/veggies.
I’ve also put chopped jalapenos in this for kick.

The recipe says toothpicks are not necessary. I used them anyway-it makes it easier for people to just pick them up and eat them without having to find a fork.
Also, I used Pedersen No cured Applewood smoked bacon from Whole Foods. So good.
The quality of meat from Costco is equal to that from any fancy grocer or butcher.
I buy from a farmer’s market provider for other reasons, but my parents often get Costco beef roasts, rack of lamb, etc., and the quality is outstanding.
Prices of most meats at Costco are better than any others I can get locally, but you have to want the quantities they offer.
We will have about 20 for Christmas. I am doing a tri-tip, tamales, and a baked potato bar. Keeping it simple. I am making a Haagan Dazs ice cream cake for dessert. I still need to plan something for Christmas eve with about 9 people. When I have time, I will be looking through the ideas here!!!
