De Anza. CC students have priority at most UC campuses.
EECS in one year is extremely unlikely due to the amount of prereqs you have to take.
Plus, there is no bonus for completing everything in one year. If anything, you are competing with other applicants who have 2-3 years of coursework and 2-3 years of ECs.
If you go CC, you don’t need the SAT and they don’t ask about your HS records
