<p>Tonight: Costco teriyaki chicken, rice and will stir fry some veggies to stretch out the chicken and to fill me up!</p>
<p>Grilled Chipotle Lime marinated chicken breasts served over sauted spinach. This is a great thread!</p>
<p>Leftover Tuscan beans tonight with good hunks of bread and some broiled halibut that was at Costco and looked pretty good for the price. No real veggies. We’re being bad.</p>
<p>Tonight is a real fall dinner…meatloaf and roasted butternut squash and a big green salad and some nice italian bread.</p>

<p>Baked chicken with BBQ sauce, a red pepper/green pepper/mushroom/onion stir-fry, and I’m trying those crash potatoes, although I only had russet potatoes and I don’t think I boiled them long enough because they kind of crumbled when I mashed them.</p>
<p>Homemade meatballs and sauce from the freezer with multigrain penne. Some crusty Italian bread. I’m out of veggies, so no salad.</p>
<p>I’ve got sewhappy’s crockpot adobo cooking for tonight. I decided to add some pork like my mom used to. Serving it with white rice. Can’t wait to see how it turns out!</p>

<p>Tomorrow will be a carbfest in my house - I will be making Ukrainian cherry dumplings for dinner (and freezing some to be boiled later)! :)</p>

<p>Notrichenough: Yeah, those russets don’t work on crash potatoes as great as the new potatoes. If you still have russets, I make homemade french fry wedges out of them. Cut potato into 4 quarter wedges and put in large bowl. Mix in vegetable oil, spices, garlic and parmesean cheese. Toss lightly with fingers…bake at 425 degrees for at least 45 minutes to an hour. Take out when golden brown and sizzling.</p>
<p>Crash potatoes work very well with white & red new potatoes for that buttery goodness & easy to pound, as well as sweet potatoes. Either small ones or cut the larger ones in half before boiling. The russets definitely crumbled. Too starcy to begin with.</p>

<p>I’m heating up posole that I made and froze when I had tomatoes, hot peppers, and tomatillos to use up.</p>
<p>Roast turnips and carrots. Pork chops topped with mushrooms (mix of button and porcini) and a dollop of creme fraiche and fresh herbs from the garden. Green salad with heirloom tomatoes.</p>

<p>Pumpkin raviolis (from Sams) with sage butter and toasted walnut sauce, and roasted cauliflower and brussel sprouts (coated w/olive oil and S&P) and a few cloves of garlic.</p>

<p>Pulled pork from the slow cooker, on multi grain baguette, cole slaw, roasted butternut squash and potatoes with garlic, S&P, olive oil.</p>

<p>I have a pound of Costco organic skinless boneless chicken thighs and not coming up with any good ideas of how to cook it tonight. Hungry for marinara so thinking of just sauteing the chicken in olive oil and serving with a pasta and marinara. And some sort of green vegetable.</p>
