A basket, your menu is missing a protein source of some sort. Could be eggs, bacon, sausage, something.

I agree that both muffins and waffles are too much sweet carbs.
I would ditch the hash brown casserole and serve a strata or quiche. You wouldn’t need hash browns with either of those.

I would not add a thing. You are already going to have a TON of leftover food. This is plenty and well varied.
I may see if I make the muffins Saturday for breakfast - just our family - if that will appease the graduate.
No ditching of the hash brown casserole or the waffles - these are generous offers from my family that I will not turn down.
One thing I’m known for with my immediate family is over-the-top breakfasts! Love making breakfast on the weekend and on vacation! Leftovers are welcome and will get eaten.
Maybe I’m being pedantic, but where are the beverages? Tea, coffee, OJ, mimosas?
Also, IMHO, chocolate waffles are weird. Regular waffles with chocolate sauce–fine. Chocolate waffles? No.

My niece offered two types of waffles - graduating daughter chose chocolate flavored waffles with sliced strawberries, shaved chocolate (on hot waffles - yum!) and whipped cream - I think they sound amazing!
It’s good you are having people bring things, and that leftovers will get eaten.
The most sweets I usually like at breakfast are Swedish pancakes with lingonberries & powdered sugar, but I remember mom making chocolate chip pancakes for my sister, who has quite a sweet tooth.
I don’t care for chocolate generally, but I realize many people like it, but perhaps you could have some plain waffles or even just toast?
I think really good OJ is plenty for a beverage besides coffee, tea, milk ( for the kids) & water, but you could also serve sparkling cider.
For beverages, maybe some carafes of fruit infused water (looks pretty and is healthy) and/or lemonade or strawberry lemonade (sparkling or plain)

Personally, I don’t think muffins and waffles are the same at all (yes, they are both sweet carbs, but taste and texture-wise, they are not at all the same to me). I do have a huge sweet tooth though, so I would enjoy having lots of sweets for a special occasion.

I can tell you with confidence, this crowd will not be happy with toast!!! If someone doesn’t want chocolate waffles (I can also tell you, everyone will try these!) there are plenty of other choices.
I did plan on some infused water either for brunch or after graduation when we kick back with gourmet pizza/salad. Cucumber is our favorite.

I’m used to my H, who likes the same thing for breakfast. Two eggs over medium, sourdough toast, bacon and hash browns.
It’s what he orders EVERY single time we go out for breakfast, anywhere.
ONCE he may have ordered eggs Benedict, and I’ve been going out to breakfast with him since 1976.
He did try something new that he liked recently however.

I just want to say that this sounds delicious! I’m getting hungry reading this. I’m not a morning sweets person but the waffle bar sounds wonderful. I agree you have to serve the muffins because your D requested them and this day should be all about her.
OJ or Pom mixed with Saint Pellegrino make great non-alcoholic “mimosas.”
Take this in the context of someone who isn’t much of a sweet eater. I would find myself feeling a bit sick if I ate chocolate waffles and that hash brown casserole. Delicious but rich. I would keep the muffins since your D is the guest of honor.
What about simple hard boiled eggs for those who might want a light protein. I also like when the host has a fresh component with the brunch such as cucumber, tomato, pepper salad with a light oil vinegar dressing. Or just a plate of cut up cukes and tomatoes.
What’s missing from this brunch? My invitation!

i think it all sounds delish. like the idea of the cuke/tomato salad, or the asparagus. here;s two more ideas: some shrimp scampi or my family’s favorite: sauteed cinnamon apples; really good with brunch foods. (but sweet)
I like the ham idea – goes well with all the carb-heavy foods, is dead simple, and for those who want a high protein breakfast, it does the trick.
Sunscreen idea is excellent, btw. I’ve seen people come back roasted red from graduations.
