<p>Very intrigued by the Creamy Taragon Mustard Chicken recipe and also the Hidden Valley Ranch pork. I love recipes with very few ingredients. That’s usually the best sign for me that they will be quick and easy.</p>

Made very quick chili that made everyone happy the other night – 2 cans kidney beans, 1 small can tomato paste, 1 can diced mexican flavored tomatoes, cumin, chili powder, one 1-lb package costco organic ground beef. Just browned the beef with onion. Then added everything else and simmered a bit. Served over rice. Hit the spot during the big storm.</p>

<p>Sounds like what I do. We also serve this over baked potatoes and then topped with shredded cheddar cheese and chopped onions.</p>
<p>I get great results using the organic boneless breasts and thighs from Costco. I keep them in the freezer, zap them to defrost in the microwave, then into the crockpot with the salsa and four hours later the house explodes with joy over what’s for dinner. Enjoy!</p>
<p>I’m going to try the pork chop recipe above this week since I bought pork chops on sale at the store. I will add the smoked paprika and let you know how it turns out.</p>

<p>*Salsa Chicken</p>
<p>Throw a few chicken breasts into a crockpot. Pour in a small amount of salsa (we like to use Southwest salsa- with the corn and beans) and cook it on low for a two or three hours. Drain off some of the liquid, if necessary, and then pour in about half of a jar of salsa over the chicken and let it cook another hour or so.*</p>
<p>Ok…it’s now in the crock pot. Used Costco breasts that come individually wrapped and Sams Club’s Artisan Salsa. I did add some chopped onion that we had on hand and needed to use up. Also, a couple of grinds of black pepper since this salsa is quite mild. Now, the crockpot is on low and we’ll see how it comes out. :)</p>

<p>Mom2college - be sure to follow Vandy’s advice on draining off some of the fluid from the salsa crockpot chicken about midway so it doesn’t get to wet. Then add more salsa for more flavor.</p>

Have you tried different beans? I usually make chicken chili and use white beans. H prefers the texture of pinto or black beans to kidney.

<p>Mostly I like to bake and make desserts, so try lots of dessert recipes.</p>
<p>This weekend I made a new fall dessert for my son and his friends, as my son was home from college for the weekend. It turned out quite well. It’s called Cranberry Pumpkin Upside Down Cake. It was not too sweet, and the cranberry glaze on the top made it very pretty.</p>
<p>Tonight, though, I am trying to make acorn squash and have never made it before. Found a simple recipe with a maple glaze that sounds pretty good. Will serve with pork chops.</p>

<p>Absolutely. I love using black beans. There is a canned version of black beans that is already seasoned, and that works well, too. I also sometimes buy the cans of beans that just say “chili beans” on them. Don’t know what they are, but they work fine. I like using a variety because it makes for a more colorful chili.</p>
<p>If we want to really reveal our secret easy but delicious dinner recipes, here’s a good one:</p>
<p>Just make some good hot dogs, heat the buns, serve with chopped onion, grated cheese, and lots and lots of Steve & Ed’s Hot Dog Chili Sauce. It’s found in the canned bean section usually. Comes in little cans. Absolutely delicious. Makes the classic Chili Dog.</p>
<p>Sewhappy- made the chili tonight. It was a hit with everyone but the 17 yr old who refused to taste it. I added a cut up red and a cut up yellow bell pepper with the onion along with some garlic. I also added a can of beer. Served it in bowls as a soup with tortilla chips on top. Also had grated cheese, the corn salsa from Trader Joe’s, fresh tomatoes and sour cream for the toppings. Also had a ripe avocado so cut that up as well. I used black beans and pinto beans.
We have just enough leftovers for a couple of us to have lunch.</p>
<p>mom2ck, I made the pork chops with the ranch dressing mix last night and they were excellent - very juicy and tender. I used just a tiny bit of Spanish sweet paprika with the dressing mix. Yum!</p>

<p>Did the crock pot Salsa Chicken. H got home late last night so when the chix was done, I pulled it out of the crockpot, let it cool, then served it as a Chicken Taco Salad…put it on top of some tortilla chips and lettuce, then topped with Mexican cheese, guacamole and sour cream. Served with some more salsa. H had seconds! .</p>
<p>I made the delicata squash rounds ( actually slicing in half & scooping & making half circles is much easier) I posted earlier & they were delicious. ( roast at 400F for 40 min after tossing with olive oil & salt/pepper)</p>
<p>H doesn’t like squash no matter how I make it & he barely ate any of this either to keep up his reputation- but that just meant more for me.</p>
<p>I just made a quiche out of what was on hand.</p>
<p>Basic recipe is 6 eggs and 2 C half and half. (this is not a low cal meal!)</p>
<p>I made my own pie crust (and I must say that it was really good!), pierced and blind baked it (aluminum foil and the jar full of dried beans I keep for that purpose) for 12 minutes. When the crust came out of the oven I immediately sprinkled a small amount of Gruyere and Parmesan, thinking it would melt and seal the crust and keep it from becoming soggy. I don’t know if that was the reason the crust stayed flaky, but it did.</p>
<p>I had cooked, drained and seasoned some spinach. Added the spinach to the egg mixture, along with more Gruyere, then poured it into the crust. I think it baked 40 minutes, but I don’t recall!</p>
<p>Alright guys, hasn’t anyone had a “last recipe you tried” that was a dessert?! Haven’t noticed one lately and I’m currently craving a little chocolate!!! :)</p>
