She wanted them to know she was really serious about wanting to go and also wanted them to know what she was self-reporting was completely accurate (all 5s and an SAT score above their 75th %ile).

If the school accepts self-reported scores, sending an official report will not boost an application. The incentive for being accurate is that they will require official reports if you attend, and any discrepancies will be problematic.
