You shouldn’t take 3 CC classes over the summer -because they’re compressed, the typical load would be 2courses - I would take CIS and Physical Geography (which is closer to Earth Science than to Human Geography).
You’re just finishing freshman year, so your goal should be to test the waters and get As. If this summer is easy, you can enjoy it and try taking 3 summer courses next summer.
OP also needs to check with CC to see if there are limits on how many units HS students can enroll. Most schools have a limit. While you can petition to enroll more, just extra paperwork.
As far as three classes go, I agree if OP has never taken any, even starting with one to get her feet wet is a good idea.

Yes, three is the maximum you can take at any given time.
Summer DE courses are compressed so that the material goes twice faster than ina typical college semester, which itself goes twice faster than a typical HS course or more. Iow, what your HS spends 1 week on, a summer college course would spend 1-2 days on, and you’d have the equivalent of one week of Hs hw every other day or even each day. That’s why taking 1 or 2 (perhaps CIS and Physical Geography) would be plenty.
Remember that these grades will remain on your transcript forever, so your goal shouldn’t be how many can I take but rather getting 1 or 2 As.
