3-2 program, 4 yr University, or 2 yrs gen-ed then transfer?

I recently just decided to change what I wanted to study from medicine to engineering. Both fields have enticed me for years, and I had been leaning to medicine for a while, but now I have decided to switch to engineering. My options are to either go to a Liberal Arts College or a 4 yr state university. With the liberal arts college, I could enter a 3-2 program, where I would attend three years (probably two since I would be receiving approximately a year worth of credits from AP exams) at the LAC and then 2 yrs at the University of Illinois at Urbana-Champaign, and would receive 2 majors, or I could attend the LAC for a year for one year and then transfer over to UIUC or Northwestern. Or I could attend a state school right away and immediately enter their engineering program.

My question is: which of these will be best for GPA? For affordability? And how will they look to employers? To graduate schools? Overall, the question is, which option is best?

Too vague without naming schools/programs and price. And transferring in to NU or some majors at UIUC is far from guaranteed.
