<p>so hungry now…I’m going to try every new recipe on this thread! I steam a pot full and eat with hard boiled eggs and butter for a quick easy dinner sometimes.</p>
<p>I often saute diced cooked (leftover or bagged) potatoes in olive oil and garlic then add spinach, pepper, a little prosciutto or bacon, and some pieces of hot cherry peppers if I want to spice it up. I toss freshly grated parmesan cheese into it right at the end. I borrowed this recipe from a great italian restaurant years ago and my kids love it so much that I have to buy two bags of spinach…there’s never a smidgeon left! It also works well with escarole and other types of greens.</p>
<p>Michelle Obama raved a while ago about a creamless creamed spinach the White House chef had whipped up. Here’s the recipe. I tried it and it’s delicious —and healthy!</p>

<p>For the recipe in #2, I noticed someone commented that when the 2 pieces were stacked one piece cooked through but the other piece was still raw. I read that people were cooking the 2 pieces side by side rather than stacking them. This is what I plan to do.</p>

<p>I love fresh spinach and, like others, use it in salads and broth-based soups. I also add it to a roasted-red-pepper-and-tomato soup that Trader Joe’s sells in a box, with some grated Parmesan.</p>
<p>Diet breakfast-poach an egg, throw in a handful of bagged spinach just before done, drain. Top with a tablespoon of low fat cheese and Mr. Dash or whatever herbal mixture you prefer. </p>
<p>Add bagged spinach to the end of cooking many things. Mac and cheese, stir fries, many pasta mixtures, soups.</p>
