Whatcha Cooking? - Comfort Food Edition

Seems I’m craving a combo of comfort food (pasta, warm sauce, roasted vegetables, bowls heaped with grain/meat/veggies, soups) and refreshing foods - citrus, crunchy greens, ice cream!). Also fresh baked bread. :slight_smile:

So, whatcha cooking this weekend? Or anything you’ve had recently had or lined up to make?

ALSO, I have both puff pastry and phyllo I need to use up. Suggestions savory or sweet? I have this on my mind:

Last Tuesday I made a lasagna for H and I knowing we would have leftovers for the week. It’s a good thing I did that since I have been sick with Covid since then so at least H has had food!

Making soup today. Will get ingredients for a different soup later in the week.

I made a dish last night called “American Goulash” that I pulled off the internet somewhere; I had never had it before. It reminded me of Hamburger Helper, but cooked with with red wine, onions, red bell peppers, Worcestershire sauce, spices, and diced tomatoes in the pot along with the macaroni and ground beef. The family enjoyed it, as did I; so I will add it to the recipe box (at least for times of cold/cooler weather).

We are doing some leftovers tonight but I was also in the mood for a creamy soup so I just made an Instapot Creamy Cauliflower/Carrot/Potato soup - it’s delicious and it was very, very easy.

I made a cabbage soup today—I used cabbage, diced and strained tomatoes, celery, carrots, onions, Rancho Gordo red beans, and beef stock. Reminded me of my childhood, except my mom put ground beef in her soup. Today was a perfect soup day—it snowed about 5 inches in my part of MA.

I love, love cabbage in soup. I have made a cabbage vegetable soup with Italian sausage that is so good.

I just made soup, too! Mine had onion, carrots, garlic, escarole and mini turkey meatballs (ground turkey, garlic and panko but in small balls so they cook faster in the soup) with some grated Parmesan and fresh parsley. Garlic bread on the side, too.

This week I slow cooked a brisket and served it with mashed potatoes and gravy - thanks to the Lovely and Talented, aka the wife, who makes the best gravy from drippings - and sauteed carrots with curry.

I had cooked and frozen tomatoes and peppers from the garden last summer along with basil, onions, and garlic. Heated that up with some turkey sausage for a nice, light sauce over pasta.

My winter self thanked my summer self for thinking of her.

Our go-to comfort food is chili. Here’s an easy and good recipe: Weeknight Black Bean Chili - Fast & Easy - Budget Bytes

I do all the steps in the sauté setting in an Instant Pot then set to slow cook.

Personal adjustments: I don’t like cumin and use extra chili powder. Double the meat – usually 1/2 lb turkey and 1/2 lb 4% fat ground beef. Also add a drained can of corn.

Corn chips, cheddar cheese, sour cream for toppings.

Today I’m making French onion soup. I’m using a new recipe from My Paris Kitchen - David Lebovitz. It’s bitter cold here and it just appealed to me. Earlier this week we had a spicy lobster pasta and lobster risotto- I had splurged on a package from Fulton Fish Market.

I made a big pot of Chicken corn soup earlier this week; it’s one of my favorite comfort meals.

For an easy comfort food….make Paula Deans Crock Pot Mac and Cheese. It is fabulous. Use 1/2 and 1/2 or light cream instead of the milk.

I made chicken soup from scratch for Thing #2 to bring to school. Scored “dad points” and kept him off the cardboard pizza at the school cafeteria.
