About essay format

Is it better to stick to the conventional essay format for admissions essay?

For example, clear thesis in intro, topic sentence beginning of each paragraph, then elaborate throughout paragraphs.

Or is it better to be creative and have a hook (like a quote) in the beginning, although without a direct thesis or strict location of topic sentence?
