Are the upper-level (junior and senior year) engineering classes more physics-intensive or math-intensive?

It depends on the class. They are all different.

What about in general for Mechanical/Aerospace?

Again, it depends on the class. There is such a wide range of topics that you can’t hardly say they generally require lots of math or lots of physics. You might take a class that has a systems engineering bent, which will be mathy but not heavy on physics. You may take a viscous flow class that will be heavy on both. You may take a mechanical design class that is overall not that math or physics heavy compared to others. It just depends on the class.
