<p>It’s funny because back when I was tracking my food intake, low carb for me was usually about 30 grams a day at least on weekdays. I eat half and English muffin or half a bagel at breakfast, but otherwise I almost never eat pasta, rice, or grains. We have wine with dinner on weekends and I eat waffles or pancakes on Saturdays, so those days I get more carbs.</p>
<p>I don’t eat rice,pasta, potato daily. I substitute potato with butternut squash, lower glycemic index, lower carbs than potato. I also substitute quinoa for rice. When I eat out, if there is no substitute we eat 1/5 of whatever rice or potato that was served.
Whatever I eat, I have no clues, but it makes my nails grow so fast compare to other people. Same with my husband. Maybe we eat too much protein?</p>
<p>In the last 4-5 months, I eat little wheat (husband has celiac and easier just to not have it in the house to prevent contamination), potatoes, sugar and grains. My favorite vegetarian meal is lettuce wraps with pan fried tofu (cut up, drain water, dust with corn starch and fry in oil) veggies with peanut sauce on the side. A cheese souffle with a green vegetable would be wonderful. If I want a few more carbs, I will saute vegetables with toasted walnuts and put on top of spaghetti squash mixed with pesto. I love the goat cheese ideas. </p>
<p>Whoops, forgot to add that the vegetable, walnut, spaghetti squash usually has Garbanzos as well. </p>
<p>don’t know if anyone has mentioned this, but one of my fave low carb/veggie meals is Spagetti Squash Pasta.</p>
<p>After cooking the halved spaghetti squash, fork the “noodles” out, and pour on a favorite spaghetti meatless sauce. The sauce can be made heartier with the addition of mushrooms, slice zucchini and other veggies.</p>
<p>I also love the Mock Mashed Potatoes made with steamed broccoli with onions, garlic, and butter/margarine…salt and pepper to taste.</p>

<p>In answer to questions–the low carb person (me) and the veggie (S) are not the same one. And he’s an adult who can also get his own meals (and probably be moving out soon) but I do like to put together meals everyone can eat when we’re together. He’s not eating any fish or seafood.</p>
<p>What’s challenging (for him especially) as he doesn’t like a whole lot of vegetables. So he can end up eating too much carbs and gain weight, without enough protein/fats too sate his appetite. Since he started eating veggie I think he’s been subsisting on TJs veg chile, peanut butter, and ramen with eggs. He needs to learn to cook the veggies he does like (green beans, broccoli, cauliflower, a couple others). But like I said, he’s an adult; if I didn’t get those lessons in earlier, I can only be a consultant and answer questions asked. </p>
