I bought some at Costco for a party and just tried one. I felt like I was just eating a tortilla shell with a little flavor, hardly any stuffing. Not impressed.
I’ve looked online and they look easy and something I could make ahead a few days. I was really wanting to avoid making more food, but they look great.
I think I need to fry them to get that crispness. I’m afraid just baking won’t do it.
Any help from those who’ve made them are appreciated?
Taquitos that have been fried then refrigerated get soggy on the bottom. Pretty quickly too–within 12 hours.
RE: baking taquitos–I use a really hot preheated oven and spray the taquitos well with cooking oil spray right before I put them in and turn them over about 2/3rd the way through the cooking time. Not quite a crispy as frying, but a whole lot less messy.
The convection oven works miracles with soggy leftover fried food. Before I got it, I wouldn’t bother to bring home things like leftover French fries. Now they get back to 99% after a night in the fridge. It’s amazing.

I have never made them myself, but this is making me crave some taquitos. I may have to run out at lunch and grab some from the hole in the wall place down the street!
Anytime! Actually, I just found a good baking recipe, where she froze them. She tried 3 ways. Baking them completely then freezing, baking 3/4 of the way, then freezing, or not baking them first.
The baking 3/4 of the way worked great, the edges didn’t burn when reheated. It. I’m going to try that.
I make them - or at least what my family calls taquitos. They are pretty tasty, but probably incredibly inauthentic.
I just mix shredded rotisserie chicken, salsa, maybe some chili powder or taco seasoning, shredded cheddar and a little cream cheese or sour cream to bind. I also tend to chop up a bunch of cooked veggies in the mix for some extra vitamins.
I roll them in flour tortillas (never tried corn, but suspect they will work if moistened) and spray with Pam or olive oil. Bake at 350 till they get crispy or brown on top, usually about 20 minutes. Agree that convection does help browning.
If you find a filling you like (I’ve used beans, rice, whatever) you can make that ahead and freeze.
@conmama have you made hard shell tacos? Making taquitos is similar. When I make tacos I fry the corn tortillas in oil. When I reheat the leftovers in the oven they do crisp back up. I’ve made taquitos when my kids were young. I did fry them in oil. We also have bought many times over the years the frozen taquitos from Trader Joe’s. The kids liked them and they did crisp up when baked in the oven. I find that the frozen ones aren’t that good. If I want good taquitos I much prefer to order them from a Mexican food locale. Two of my kids love the flauntas sold at Costco. Similar but they are a flour tortilla.
We love a freshly made hard shell taco. They aren’t healthy so we reserve them for just a few times of the year. Usually Valentine’s Day and birthdays.
My recommendation is to make some nachos. They taste better and are easier, IMO. Or quesadillas. Taquitos fall pretty far down on my tex mex scale of deliciousness.
@mom60 , thanks. Do you prefer the corn tortilla over flour for any particular reason? @doschicos , I’m making this for a buffet. Easy finger foods. Quesidillas might work, hmmmm.
