AP Psychology or self study stats?

Good afternoon. I realized that I have an open period on my schedule for senior year, with 4 AP classes and then Jazz ensemble. The only AP option to fill the empty class is with AP psychology, the only AP class I haven’t taken yet offered at school. However, since I intend to be a math major - either pure, applied, or statistics, I don’t know - and since I have a textbook already, I’m highly considering teaching myself AP stats. This would result in taking that free period to just be a TA all year and reading the book during that period. What are your thoughts? Even though my schedule won’t seem as rigorous given I’d only have 4 APs, band, and TA, will it still show colleges that I’m passionate enough about math to teach myself statistics to compliment my intended major? I know I can’t get into any really prestigious colleges, I’m going more for UCs than anything. Any feedback would be greatly appreciated.
