AP Spanish problem

Thanks to everyone in advance.

I am a junior currently and am taking the following classes:

AP US History
Photography (required fine art)
Honors English( highest class a junior could take)
AP Spanish
Honors Pre-Cal
AP Bio

I also planning on taking the AP tests for AP Environmental Science and AP Calculus AB.

My AP Spanish teacher is having health issues and will most probably not return this school year. We have had 3 substitutes so far and we have begun an independent study program even though we still have a class for the subject. I am not a native speaker nor am I fully capable of learning Spanish myself.

Will University of Chicago have a problem if I do not take the AP Spanish test but remain in the class. I have no other option because we are not allowed to switch out of the class so late into the semester. (We found out just this week.)

Is there a section on the application where I could justify this decision or will I seem like a whiny teenager trying to get out of her responsibilities?

Taking the AP test isn’t a responsibility at all, and most college’s don’t really care about your AP scores. What I’d watch out for instead is trying to self-study calc, as pre-calc is a prerequisite… you will either have to self-study/get very ahead in pre-calc in order to manage the new calc material you’ll be learning, or wait until you’ve covered the necessary things in class (probably a bit into the second semester) then cram for the AP.
