Apple recipes

<p>My fridge is full with apples that I picked last weekend — mainly Macintosh. Anyone want to share some favorite apple recipes? I’ve got apple pies and crisps covered. I’m open to anything – but creative uses in main courses, or some good (and easy) muffin/bread recipes, would be nice.</p>

<p>Here are two of my favorites:</p>

<p>Hidden Secret Apple Cake</p>

<p>Cut up 6-8 apples (enough to fill the baking dish you are using)
Sugar
Cinnamon
¾ cup butter, melted
1 cup sugar
1 cup flour
1 egg</p>

<p>Preheat oven to 350
Fill a pie dish or casserole about 2/3 full with sliced apples. Sprinkle sugar and cinnamon over the top.
In a bowl, combine melted butter, sugar, flour, egg. Mix very well, and pour over apples
Bake at 350 for 45 minutes or until golden brown.</p>

<p>Apple chicken bake</p>

<p>3 boneless chicken breasts
1 large onion
½ cup butter
pepper
3 sliced apples
½ cup Parmesan cheese
½ cup bread crumbs</p>

<p>Preheat oven to 375 degrees</p>

<p>Spray a baking dish with Pam. In a small pan, sauté onions in butter (I usually use less butter than the recipe calls for). Put pepper on breasts. Toss apples and onions. Put on bottom of the baking dish. Place chicken on top. Mix cheeses with bread crumbs and sprinkle over chicken. Bake for 45 minutes or until done.</p>

<p>One of my favorite (and really easy) ways to use apples is to slice them very thinly and add them to a grilled cheese sandwich. Whole wheat or sourdough bread. White cheddar or gouda. Any crisp, sweet/tart apple. Yum!</p>

<p>Take one iPhone 6 and microwave for 30 seconds. :)</p>

<p>Will have to look up some of my favorite apple recipes, but wanted to say “hurray for apples!” - I feel that Pinterest has snubbed fall apples and has been take over by everything pumpkin!!!</p>

<p>My favorite one was suggested by Tim Cook. It ends up being delicious but it requires to download the recipes several times, mix all the ingredients a few times, and bake at least three trials. The recipe comes with numbers such 8.0.1 and 8.0.2. It is the Smart Apple Pie! </p>

<p>I like to put tart apples in a tuna sandwich along with a curry powder to punch it up.
Also like baked apples and want to try these fried apple rings.

<p>fireandrain, that apple cake sounds easy and good. I usually do a basic crisp with oatmeal crumb topping. </p>

<p>Instant apple sauce:
Cut 2 or 3 applse into chunks. (Throw away cores or put it in the compost bin.) Microwave chunks for about 1 minute on high. Sprinkle with cinnamon. Put in blender. Serve warm.</p>

<p>I like to have cabbage in my fridge because it keeps for so long and in a pinch stands in for a regular green salad. I make a “Waldorf” cole slaw by adding chopped apples, walnuts and raisins (or craisins) to my favorite slaw recipe.</p>

<p>I’ve been buying a peck of honeycrisps every week or so and eat at least one every day.</p>

<p>Ha ha everyone. I own an iPhone, an iPad, iPod and a Macbook, and still have the 128K Macintosh from 1984 and another CPU that runs system 9, but all I was thinking about when I started this thread was the edible red fruit that grows on trees.</p>

<p>1moremom, I too like to add apples to cole slaw or Swedish beet salad.</p>

<p>For baked goods, quince is a great substitute for apples. </p>

<p>Just made an apple crisp. I modified the Better Homes and Gardens New Cookbook 14th ed pg 273 recipe. I made two 9x13 pans- froze one. Here’s the recipe for one 9x13 pan, baked at 375 for 40-45 minutes.</p>

<p>5 extra large apples = 3.5 # (gala- now live in FL and choices limited- these were on sale)
4 Tbs sugar Or up to twice that for less sweet apples)
1+ Tbs cinnamon (we like the flavor)- enough to coat apples as you wish</p>

<p>Peel and core the apples, slice thinly and toss with the sugar and cinnamon. Put in pan.</p>

<p>1 c oatmeal
1 c dark brown sugar
1/2 c flour
1 Tbs cinnamon
3/8-1/2 c margarine (I used less this time because I could finish a half stick of margarine for both pans)</p>

<p>Mix dry ingredients, cut in margarine. Put on top of apples, bake, cool, serve (with ice cream?).</p>

<p>Note- huge apples have less waste, smaller ones may want to use more by weight. Can cut way back on cinnamon. Can add nuts or coconut-1/2 c per recipe. Recipe calls for 5 cups apples. I doubled the recipe and added a lot more cinnamon (for this doubled recipe 1/2 tsp of cinnamon or nutmeg only in the topping per cookbook).</p>

<p>fyi- I just printed the page my recipe was on and cut it out- fits a 3 x5 card.</p>

<p>I made apples crisp without the oatmeal.
I have it with ice cream.</p>

<p>Apple Dante Cake
3/4 C shortening; 1 C white sugar; 1/2 C brown sugar; 2 eggs; 2 t cinnamon; 1 t baking powder; 1 t baking soda; 1/2 t salt; 2 C flour; 1 C buttermilk; 2 C apples, diced…Topping: 1/2 t cinnamon; 1/4 C sugar; 1/4 C brown sugar; 1/2 C chopped nuts
Cream shortening and sugars until light and fluffy. Add eggs and beat well. Sift dry ingredients together and add alternately with buttermilk to creamed mixture. Fold in apples. Pour into greased and floured pan–9x13 or bundt. Combine topping ingredients thoroughly and sprinkle on top of cake. Bake in a 350 degree oven for 30-40 minutes until toothpick comes out clean. </p>
