I think George Washington’s mascot is George.
Many schools have groups of real people. UMASS has Minutemen, UVA has Cavaliers, many Cowboy, Pioneers, Miners, so the mascot are costumes of people.

Oberlin’s mascot up until recently were the Yeomen/Yeowomen. While the teams retain those names, the new mascot is now the Albino squirrel…

The female Claremont–Harvey Mudd–Scripps atheletes are called the Athenas. So, not named for a mortal person, but at least an individual depicted in human form.
Add Penn Quakers, although I think the OP was really questioning if the there were real individuals used as mascots.

Vanderbilt is the “Commodores,” after Cornelius Vanderbilt’s nickname. The mascot is a guy dressed as a Commodore, sort of.
Williams teams are the ‘Ephs’ (for Ephraim Williams), but the mascot is actually a purple cow

Oklahoma State is the “Cowboys”, and their mascot is a grizzled cowboy named “Pistol Pete”. The mascot was designed in 1923, based on a real-life 19th Century cowboy and gunslinger named Frank “Pistol Pete” Eaton. He was still alive and gave his permission.
In fact, Eaton personally acted as a “living mascot” for Oklahoma State for many years before his death. Try to imagine Ephraim Williams or Lord Jeffrey Amherst or Cornelius Vanderbilt personally making an appearance to act as a mascot at their respective schools.
Just got back from Wheaton College in Massachusetts - they are the “Lyons” - the mascot is a mountain lion, but the team nickname with a “y” is named after Mary Lyon, who helped establish Wheaton’s (then seminary) curriculum.
In 1975, Stanford students voted to have the Robber Barons as their mascot, but the school refused it.
