<p>I was listening to NPR on the way home and enjoyed the Found Recipe segment. It featured Atlantic Beach Pie from a restaurant in Chapel Hill NC. Holy cow it sounds divine! I think I will make one for Sunday dinner.</p>
<p>What was in it?</p>
<p>It sounds a bit like key lime pie. It has a crushed saltine cracker crumb crust, a creamy citrus filling, and a cloud of sweetened whip cream on top. Salty, lemony, sweet and creamy… Yum!</p>

<p>I don’t really like saltine crackers, so I am wondering if I’d like that crust. I love graham cracker crusts. I’ll probably just keep making my standard key lime pie recipe.</p>

<p>This is the way I learned:</p>
<p>Mathmom’s Key Lime Pie</p>
<p>1 cooked graham cracker crust (9 crackers worth of crumbs, 1/2 cup butter pressed into a pie plate, bake at 375 for 6-8 minutes)</p>
<p>1 14 oz can sweetened condensed milk
1/2 cup lime juice
2-3 egg yolks
2-3 egg whites, beaten to soft peaks</p>
<p>Mix milk, lime juice and egg yolks well, (I use the whisk I’ve used for the egg whites), then fold in egg whites. Bake at 325 for 12 minutes.</p>
<p>Top with whip cream.</p>
<p>My Florida sister-in-law says both whip cream and meringue are allowed but I always use whip cream with a bit of sugar and vanilla. Hers doesn’t call for cooking at all. I’m pretty sure I’ve eaten it, but I don’t think I’ve used her recipe.</p>
<p>Ivy’s Key Lime Pie
1 graham cracker crust
4 egg yolks
1 cup key lime juice (or mix or regular limes and lemon)
1 14 oz can sweetened condensed milk</p>
<p>Beat the egg yolks thoroughly. Add lime juice and milk, beat till smooth. Pour into prepared pie shell. No cooking required according to her unless you do the meringue version (which she prefers).</p>
<p>For meringue, you take those four leftover egg whites, beat into stiff but not dry, gradually beating in 1/3 cup of sugar. Cover the pie with the egg white mix and cook at 350 until golden brown about 10 -15 minutes.</p>
