Hello would B.S. in Mathematics plus a minor in Economics be more impressive than double B.A. in Mathematics and Economics? or vice versa?
I want to become an actuary or an accountant.

Neither is more impressive in and of itself. What is impressive is if you have relevant coursework AND experience during your time at school. If doubling means less time to gain real experience, it can hurt you, not help you.
@AwesomeAxolotl
Do you think the difference between a Math B.A. degree and a Math B.S. degree plays a huge role in the job market?
No, in fact many colleges only offer a B.A. in the arts and sciences.
To be an accountant, at least to be a CPA, you would need a bachelor’s or master’s in accounting.

Okay thank you!
