I’d also ask the ones with dietary issues what they’d like. My mom would work around certain foods or she’d eat differently for the main in order to allow a dessert that fit within her carb allowance.

If chocolate is ok, you could try a chocolate soufflé or (much easier…) chocolate or vanilla custard.

In Chinese restaurants, you might sometimes have encountered red bean soup for dessert. It is not that sweet compared to many desserts, and should be easy to make with even less sugar.
