Best meal ideas for company

I make a variation of the above casserole but with yellow spanish rice and a can of condensed soup ( whatever I have chicken, mushroom, onion). Firm fav. I think I may try the above for a change.

Spiral ham, that cold broccoli salad, some rice, and bread. Leftover ham for sandwiches! Easy peasy!

Totally agree with Thumper. I typically always have a half spiral sliced ham in the freezer for an emergency dinner w/friends. I just did one last weekend with cold broccoli salad.

Our other go-tos for quick dinners with friends.

Shrimp kabobs…shrimp, pineapple, cherry tomatoes, green pepper onion. Marinade and grill. A Salad or cold rice or tabbouleh salad.

Grill a premarinated pork tenderloin and slice thin. Make gyros with flatbread, feta, tomatoes, chopped lettuce and cucumber/dill sauce.

Ribs. I cover them with dry rub. Wrap in aluminum foil sealed and put them in a slow oven (225) all day. Potato or pasta salad or coleslaw and garlic bread with barbeque sauce on the side. The rub caramelizes so you don’t have gray meat and the meat is so tender it falls off the bone. You can also take them out after 4 hours and finish them on the grill, but my family prefers them so tender the meat falls off the bone.

I would definitely do a big boneless center cut pork roast out on the Weber for a houseful. It’s cheap. Easy. No muss. No fuss. Tastes fantastic. Can do a really big one for leftovers.

I’ve also been known to do one of Paul Prudhomme’s big soup or stew recipes. N. England clam chowder. Texas chili. South Miami Cuban stew Serves a crowd with a salad for dinner and for lunches.

Thanks!

My menus are planned and grocery list is made…sometimes a fresh perspective gets me out of a rut!
