I plan on going to UCB as a double major in chemical or biomedical engineering and classical languages. What SAT II’s should I take?

Definitely Math II and Chem.
Physics and Latin as well?

Are you aware that Subject Tests will not be required for Fall 2012 applicants? They may, however, be recommended depending upon the program you are interested in. I think in your case it would be advisable to take two Subject Tests (someone more familiar with UCB and the UC system can help clarify this). Math II and Chem appear to be the logical tests considering your academic interests. You might want to take Physics as well; UCB will consider your two best performances. As much as I enjoyed and did well in my HS Latin courses I don’t see where you would advantage yourself by taking a fourth test.

From what I’ve noticed, Acdoms like to see academically rounded students.

For instance, if a person’s intended major is Physics and one of the Subject Tests a student takes is not related to science (i.e. either an “arts” test or a “language” test) and they do reasonably well on that test, that bodes well for the student and may well be what guarantees you a spot in the incoming class.

This is just based on observation and what I’ve heard from friends who are currently in places such as Harvard and Princeton. Don’t hold me to my words :)
