I will be having 10 people for lunch on Wednesday. I’m looking for simple, lunch appropriate boneless chicken breast recipes.
Low cal would be great, but not necessary.
I may wind up just doing a couple of marinades and throwing it on the grill, but I’m looking for other ideas.
We like mushrooms and onions, garlic, green pepper.
I may do Marsala, but don’t really want pasta for lunch.
I’ve found a couple of mustard recipes, but I’m not sure everyone would like that.

You can cut back the butter, probably cut the parm in half and stir fry some onions and peppers in Pam.
- Bread and fry the cutlets. (I use 50-50 flour and breadcrumbs.)
- put into a baking pan.
- Drizzle balsamic vinegar onto both sides of each cutlet. (I tend to do more than just "drizzle")
- Cover with grated parmesan cheese. Bake until melted.
My family LOVES these, and they’re 2 minutes more work than plain breaded cutlets.

I’ve made this Chicken Breast Marbella for a group. I like to serve it cold for lunch.

Thanks everyone. It’s funny. I think I saw that chicken Lombardy recipe, and thought it sounded very good. But one review said it’s very heavy. Is that true?
If you use the recipe @lookingforward posted, make sure to actually season the chicken.

I don’t really see how I’d call it heavy. Most reviews I saw were high stars.
Some pictures show it with lots of cheese, but half a cup of mozz is less than two T per breast. Most lighter recipes would halve the Parm. This is the WW version, foor comparison:

Or you could consider Rocco Dispirito’s Chicken Piccata.
This is just my personal preference but I like seasoning chicken overnight in garlic powder, onion powder, crushed red pepper flakes, black pepper, and maybe some lemon pepper. Maybe even throw in a few whole basil leaves. Also, I clean the chicken with salt and a lemon and use the lemon to scrub it.
We are going to grill some pre-marinated chicken breasts, pair with marinated grilled flank steak, and make fajitas.
Tortillas, sauteed bell peppers in various colors, onions, guacamole, cheese, sour cream, and beans and a salad on the side.
@Nrdsb4, that’s another option I was thinking of. And it sounds like our crew will actually eat avocado and the other sides, so I might go for that.
chicken salad: poach chicken breasts. shred chicken over salad…add toasted almonds, green onions and girds lit vinaigrette… optional chinese noodles (fried) pretty rolls…and you are done.

This is an excellent, very tasty, very “classy” entree. We just love the taste.
I was going to suggest a chicken waldorf salad. Yum.
Is there a Caribbean Latin supermarket in your area that sells a marinade called "mojo? (MOE-HOE)? There are different brands of mojo. If you’re not familiar with it, typically it’s a concoction of orange juice, grapefruit juice, garlic and various spices. Let those suckers marinate in about 6oz. or so for at least 2-hours and your chicken will be infused with a fine flavor and with tender cooking will come out of the oven moist and juicy. Made this dish last week for a holiday party and it was a hit.
Thanks everyone. “We” have decided to go with barbecued chicken both regular and spicy, along with potato salad and some other sides. I do plan to try some of the suggestions made over the next couple of months.
